Make Ahead Mondays

Hey all!  I hope everyone had a good weekend.  I wasn't feeling the best (something I ate), so I wouldn't say it was the most productive/enjoyable weekend.  But I did get a few things accomplished, one of which was cleaning my Keurig.  Checking those monthly goals off one at a time!  And, Colton Herta won Saturday's Indycar race, so that was really exciting!

Today I wanted to share something that I have been doing that has helped me start off the week on a good foot - make ahead Mondays.

I meal plan each week, and while I always have the best intentions, I don't always stick to the plan.  And I find that if I get off track as early as Monday, that really sets the tone for the week.

To help change that, I have started planning a 'make ahead meal' each Monday.  Sometimes that make ahead meal is something made in the crock pot meal, a casserole that just needs to be backed, or something pulled from the freezer.  Whatever it is, it's a meal that I don't have to start from step one come dinner time.  I may still need to make a side, or do a few steps to finish it off, but the idea is that at least a portion of the meal is already made, if not already done.

One of my 'make ahead Monday' meals from Half Baked Harvest.

Another one from the Mix & Match Mama Simmers.

When dinner is as simple as that, it makes it way easier to stick to the plan and start the week off on the right foot.  Plus it helps to provide a little guidance each week when meal planning.  I know sometimes when I go to meal plan, I have trouble deciding what to actually make because there are so many recipes that sound good.  Having a theme helps to narrow it down a bit, though.

Again, this just helps my week go a bit smoother, so I wanted to share in case someone else liked the idea, too!

If you have any good crock pot recipes, or casseroles that taste just as good made a day or two ahead of time, please send them my way.  I am always up for trying new ones!

  6. I tend to have a big cooking day once a month where I prep meals for the freezer and then I can just use those on busy nights or when I don't fee like cooking. I still try to meal plan but there are always times when the plan just isn't going to happen/work.

  7. Seriously my least favorite thing to do...well right behind laundry. haha. I don't mind the grocery shopping or the cooking but the planning meals is so hard.

    1. Agreed - I feel like once August hits I start getting back on track with planning. I like to use my crock pot year round, but there is something about this time of year that has me wanting to use it even more!
