Recipe Round Up: August 2017

Below are the new to me recipes I tried last month.

Cream Cheese and Red Pepper Jelly Dip
Cream Cheese & Red Pepper Jelly Dip from Whimsical September.  I had a weekend last month where I just did not feel good and was pretty much on the couch the entire time.  I didn't make it to the grocery store, much less prepare food ahead of time, so when my book club rolled around on Monday, I was in need of a quick app to bring.  Erica had just posted this recipe and I thought it would be perfect.  I think I have actually had it before, years ago, and enjoyed it, so that reiterated my thought to go for it.  I only had to pick up two ingredients, because I already had some chips at home.  Easy peasy.  It was a favorite at book club and one I will definitely be using in the future, especially in a pinch!  A few things to note - I used a sweet and hot pepper and onion jelly, because my grocery store did not have red pepper jelly.  I also used Multi-Grain Pita Chips, because that is what I had on hand.  Still super delicious, even with a minor tweak.  I think that's what makes this recipe great, too, is that you can try out different toppings, depending on what is available.  There was a jalapeno jelly at the store, which I almost picked up.  Thinking it will have to be given a try next time!   


Chicken Fajita Bowls

Healthy Chicken Fajita Bowls from Turqoise & Teale.  This recipe was so good and so easy.  First off, it's Mexican, so it's obviously good.  Second, it's done in the crockpot which makes it so easy.  I did ask Ashley about having it in the crockpot for a longer than the suggested 6 hours on low, because if you put it on before you head into work for the day, by the time you get home and are ready for dinner, it's going to be a lot longer than 6 hours.  She suggested to stick with the 6 hours, so I would either make this on the weekend and just heat up during the week, or run home at lunch to throw it together.  When I made this, I used mild salsa, but for an extra bit of flavor, I think I would try medium next time.  If you are a big fan of Mexican food and an easy dinner, I highly recommend this recipe.  




Cauliflower Taco Bowls from Designer Bags & Dirty Diapers.  This was a bit of a disappointment.  I had made a meal with riced cauliflower before, and thought I liked it, but was not a big fan of these.  It was probably my fault, since I just topped it with salsa and gauc because that is what I had on hand.  I think the lettuce and fresh tomatoes would be much better, not to mention the addition of refried beans.  My recommendation - give this a try, but try it as is, instead of going the 'easy' route like I did.

  1. I love the first two recipes! I have never made the cauliflower bowl, and I hate cauliflower so I doubt I will haha. Cream cheese with red pepper jelly is one of my go-to apps to take to friends house! Great suggestions!

  2. All of these look amazing! I haven't had that app in a while, so hopefully I can come up with an excuse to make one ha! And I love anything Mexican! I love making it myself more than going out because I can make it so much healthier and not greasy!

  9. Brie and pepper jelly also go phenomenal together on crackers! I didn't think to try cream cheese but sounds good.

  13. I've never had pepper jelly like that, but I've had it on a chicken sandwich that was really good. The fajita bowls sound really good and super easy- which is a huge plus!
