What's Up Wednesday: May 2017

What I'm eating this week...

Monday: Panera...and when I say that, I mean I ate it for breakfast, lunch and dinner!  I tried out their Green Passion Smoothie and holy cow as it delicious.  Not crazy about the amount of sugar in it, but I felt like it was a good way to get in some fruits and greens after indulging over the long weekend.  
Tuesday: Salad.  Again...need more greens!
Wednesday: Crockpot Mediterranean Pork Chops...these are so good and I haven't made them in forever!  
Thursday: Crispy Mustard-Roasted Chicken...not sure what I will pair it with yet, but probably a salad or green beans.  
Friday: Leftovers!

What I'm reminiscing about...last year's Rooster (Bar) Crawl.  It's coming up this weekend and I am so excited!  To give a little background, I am part of the Young Professionals Board for Provident in St. Louis.  Provident is a non-profit whose mission is to help people to a brighter future through counseling, suicide prevention and intervention and other various community support programs, like after school programs.  If you are in the area and would like to join us, you can register (or donate) here.  Last year far exceeded our expectations and we hope to do even better this year!  I love a good bar crawl, and it's even better when it's for a good cause.  

What I'm loving...I have two super random things, but the TV show MacGyver and yogurt parfaits.  I had both seasons of MacGyver recorded on my DVR and just finally got around to watching them the past few weeks.  I remember the old one from when I was little, so I was curious about this one.  Well, it's a win for me!  On to the yogurt parfaits - while I was in New York, I got hooked on them again and decided to make my own.  I usually have one as a snack during the day, and I am loving them.  The Greek yogurt gives me protein, blueberries help me get in fruits and then the granola gives it a bit of crunch and sweetness which makes it even better!  

What I've been up to...I feel like life has been crazy this past month.  Work was nuts, all leading up to our big New York trip.  I feel like it took me a bit to recover from that, and then it was time to head to Indy to see my family and for the race.  All good things, though!

What I'm dreading...I don't know if you would say I am dreading this, but honestly I wish time would just slow down a bit in some aspects.  And then of course, in some ways, on some things I wish it would speed up!  But really, by the time I do this post next month, we will be half way through the year.  How did that even happen?!

What I'm working on...not procrastinating.  Some days I am REALLY good at being on top of things and not letting them fall to the wayside.  Other days I am a terrible procrastinator.  I can often reason with myself that I should relax and just get to it later, when in reality that adds stress on.  My 'relaxing' time is somewhat clouded by that list of things to do in my head, so in reality it would be much more relaxing if I did things right away and had a shorter time to 'relax' than if I put it off.  Hopefully that makes sense, because I feel like I just wrote in circles!  I feel like with how crazy things were at work for awhile, I still haven't gotten back to being on top of my game - hoping that will change! 

What I'm excited about...seeing my family again in just a few weeks!  Being 3-4 hours away from both my parents in one direction and then my brother, sister in law and nephew in a different direction, not having those set plans to see each other after a get together always makes being away harder.  But we have a few things planned for this summer, and that makes it so much easier!

What I'm watching...MacGyver as I mentioned above, Home Town, Teen Mom, Real Housewives (both New York and Potomac), Southern Charmed...really the list goes on.  I love a good TV show!

What I'm listening to...nothing!  I should probably just remove this from my posts going forward, because I am pretty sure I never am really listening to anything when it comes time for these!

What I'm wearing...I shared last Wednesday what I wore for work all week.  I did stray a bit from my original plan with my outfit on Wednesday.  I wanted something a little less bulky for the day (it was our final weigh-in) and have a few favorite outfit!  A v-neck sweater (on sale!), tucked into crop pants (on sale!), black and silver earrings, a skinny belt and heels.  Simple and classic!  

Yesterday I opted for a super simple black dress (I always go for the things that don't take much thinking after a long weekend) and it will be a game time decision what I will be wearing this morning!

What I'm doing this weekend...Rooster Crawl!  

What I'm looking forward to next month...another trip for work and some family time.

Bonus Question: What is your favorite vacation spot...for sure Michigan - Union Pier to be exact.  I have been going there with my family forever and it is just the best place.  Unfortunately, the timing doesn't always work out with work, but I did manage to sneak there for a little bit of time last year (recap here).  Morning runs, long days at the beach, then yummy dinners both in and out, followed by sunsets and cards.  Doesn't get much better than that!

Memorial Day Weekend Recap: Indy 500

Happy Tuesday!  I hope everyone had a great weekend.  I had a few highlights to the weekend, the major one being the Indy 500.  The weekend kicked off though with a movie - Baywatch.  I thought it was pretty funny.  Something light-hearted that will make you laugh.  

A productive Saturday morning was in store.  It's always so nice to not have to wake up to an alarm, even though I still am an early riser.  Picking up around the apartment and a walk rounded out the morning before heading to Indianapolis.  We got to my brother's right at dinner time.  In true holiday weekend fashion, we had burgers on the grill, along with a super yummy coleslaw my mom made and a few other sides.  My sister in law's birthday was last week, so we celebrated her with an angel food cake, strawberries and blueberries, and whipped cream.  I so wish I had some of that right now to snack on as I type thing!  So good.  It was really nice just visiting after dinner.

Sunday morning came EARLY!  We headed to the speedway around 4:15, picking up some breakfast on the way.  The place where my dad and brother normally park was already full, due to all the mud, so we found a new parking area that was pretty much just as close as the other.  It was still a walk from the park, so we left a little before 6:00 to head in.  6:00 is when the cannon goes off, letting everyone now the speedway is open.  First thing we did was pick up lanyards to hold our tickets, then we started walking.  Over the course of the day we walked about 7 miles!  It was crazy seeing the speedway in real life - it is so big.  It's truly hard to explain the experience in words, but I definitely concur with it being referred to as 'The Greatest Spectacle in Racing.'  I will let the massive amount of pictures below do the rest of the talking.

We headed back to my brother's afterwards, said bye to my parents and then pretty much relaxed the rest of the evening.  It was an early night, because holy cow, was it a long day!  Monday is was slowly back to reality - gym, laundry and mentally preparing for the week ahead!

The Indy 500 is definitely a neat experience and we already have plans to go back together again next year!

Friday Favorites

Happy Friday!  I felt like I was one day ahead the whole week, so I am glad to finally see Friday!  And the long weekend.

1.  I picked up two pairs of jean shorts from Old Navy this week, and a pair of sunglasses...all for $28.  I was in need of a new pair of shorts, but since I don't really wear them all that often, I wanted to not spend much money.  Old Navy was (and still is) having 50% off shorts, making them only $10 a piece (for some reason they are showing up a few dollars more online).  I grabbed both a dark and medium wash to have.  I was going to check out when I saw sunglasses.  I am always buying new sunglasses, and for $5 these couldn't be passed up.

2.  Kind of a funny story behind this favorite.  My mom bought me this toothbrush because my dad told her I HAD to have it.  He had gotten it not too long before and really liked it, and decided I needed one, too.  My dad hooks my brother and I up with certain tools, flashlights, a small shop vac - that type of stuff, so it's kind of funny to me when the next 'must-have' was a toothbrush!  It's crazy cheap compared to other electronic toothbrushes, and I think it is just as good.  It keeps a good charge, so you don't have to have it plugged in all the time, which is nice for me.  I usually charge mine on the weekends and then it will last the whole week!

3.  Have any of you watched Nate and Jeremiah by Design on TLC?  I am LOVING their show.  Unfortunately the season is ending, but I believe there is a marathon going this weekend.  Nate Berkus and Jeremiah Brent help people who are in dire need of a renovation / new design for their home.  For example, on an episode last weekend, the family they helped had a pipe burst which flooded their house and caused the first floor to be pretty much striped down to the studs and concrete floors.  Shortly after, their daughter was diagnosed with cancer.  Just such tough circumstances.  Apart from the design element, it's so fun to watch them interact with each other and the real star of their show, their precious little daughter Poppy.  Just SO CUTE!  Anyways, the show is one of my latest obsessions.

4.  I came across this song a few nights ago and just love it.  I admit to having watched the High School Musical movies, even though I was in college when they actually came out.  I love a good musical and some of those songs were just so dang catchy!  I vaguely remember the original song, but this version is so good.  Definitely more 'grown up', if you will!

5.  I love James Corden's show, but that late late time does not work for me.  He was on primetime this week and did NOT disappoint.  Carpool karaoke is always a win and his Beauty and the Beast sidewalk performance (with some actual actors from the real movie) was so awesome!

Recipe Round Up: April 2017

Greek Salad Bites from Designer Bags and Dirty Diapers.  I made these for book club and they were a hit!  Super easy to make, although I had a hard time finding the taziki sauce.  I ended up using a Greek yogurt dressing, which I thought was really good.  I finally did see some taziki sauce at Trader Joe's, but that was on a later trip.  If you are looking for a fresh, lighter app, these are it!    

Roasted Spaghetti Squash from Martha Stewart.  I opted for this recipe, because I could not cut through the squash without roasting it first!  Emily mentioned that you can prick it, microwave for a few minutes, and then cut through to roast, so I might try that option sometime.  This works well though, and although you can't really add any seasoning to the squash since it is roasting whole, I don't mind it!  Tossed with a good spaghetti sauce, you don't really need to add anything else.  For leftovers, I stored the spaghetti squash plain in one container, and then portioned it out as needed.  Such a great alternative for when you want pasta, but not all the carbs!

Show & Tell Tuesday: Travels

Time to share all my travels.  The past few years have been all about long weekend trips and work trips!  Still to come this year - I am hoping to join my family for our annual Michigan trip, road trip with my mom to Oklahoma (to see The Pioneer Woman, of course) and Texas (Magnolia Markets - need I say more?), and fingers crossed, make my way back to NYC around Christmas.  For now, though, let's take a little look at past trips.  Just click on the cities and you will be taken to that blog post!
