Hello from Naples!

Hey all!  This is coming to you from Naples, Florida!  My boss and I flew down yesterday.  I was able to have a free day, which was spent relaxing and reading by the pool.  I will be back Wednesday with a recap of my weekend and trip!

Friday Favorites 2.26.16


Happy, happy Friday!  Bring on this weekend.  While it is going to be a busy one for sure, it is also going to be a lot of fun!  Here are a few of my favorites this week.

Pizza night!  Wednesday night, I was really worn out.  I think I have just been stressed about upcoming events and decisions, that it took a toll on me.  I was heading home from the gym Wednesday night and the last thing I wanted to do was cook..  Instead, I let Pizza Hut take care of dinner.  It really hit the spot.  I don't order out a lot, so it was a really nice treat.

Successful dress shopping.  I ordered two dresses as options to wear to the gala I am volunteering at tonight.  I was pretty much banking on one of them working, so I was a bit worried before they arrived if they would fit.  Luckily, both fit!  I am still trying to decide which one to go with - it's going to be a game time decision!  One is more dressy, but this one is classic and can be dressed up with accessories.

Fettuccine with Sausage and Peppers.  I made another one of Kris Jenner's recipes this week.  It was delicious!  It's the perfect dish to make when you are craving a lighter pasta that packs a lot of flavor.  It is also very filling, without being heavy.

Another gorgeous weekend.  This weather is all over the place.  Last weekend we were in the 60s-70s, Wednesday we had snow that came overnight and through the morning, then disappeared by the afternoon, and now we have another weekend in the 60s.  It is just wild.  I feel like it's a constant up and down - I am worried that it is going be the middle of June and snowing with how it is going!  I still could go for a one big snow...we actually had quite a bit on Wednesday and it was a winter wonderland.  I wish I had gotten a picture, but I didn't on the way to work and by the time I headed home a majority of the snow was gone! 

Vacation pictures!  It seems like everyone has been going on trips, or talking about going on trips.  For those that have traveled, I have been loving seeing all the pictures!

Disney Tag

I love Disney movies, specifically Cinderella.  She was my absolute favorite.  When I saw Yesi tagged me in this Disney survey, I knew it was definitely something I would want to complete.  I mean, who doesn't love Disney?  I basically grew up on the classic Disney movies and I love all the parks! 

1. Favorite Disney film? Oops, I already mentioned this one above.  Cinderella.  I have seen almost all makes of this movie - I just love it!


2. Favorite Disney characters? I love the Princesses, but again Cinderella is my favorite.

3. Favorite Disney Princess? I should have just combined the first three questions into one - Cinderella!

4. Favorite Disney sidekick? Gus-Gus.  How could you not love a chubby mouse, not to mention one who's name is Gus-Gus. 

 5. Favorite Disney song? "A Whole New World" from Aladdin.  Or "Beauty and the Beast" from Beauty and the Beast.  Both are such classics!

6. Which Disney character would be your best friend? This is a hard one.  I would say Belle - we could just spend all our time reading books in that sweet little shop.

7. Who would be your Disney pet? The tubby puppy from 101 Dalmatians, Rolly.  The one who is always hungry.  He seems like he would be such a fun little one to cuddle with.


8. Have you ever been to Disneyland? Yes, I actually spent my 22nd birthday at Disneyland!  I spent my last spring break in Newport Beach.  Since you get into the park for free on your birthday, we decided to go.  I even got a birthday pin to wear that day!

9. Who is your favorite Disney Villain? I don't care much for the villains...

10. Do you collect anything Disney?  Not really, but if anything, Cinderella ornaments.  I have about 5 different ones on my Christmas tree.  Hallmark usually has new ones every year, so if there is one I like, I usually get it!

11. What Disney film would you star in if you could? Of course, Cinderella, if you couldn't already guess that!

12. How old were you when you watched your first Disney movie? I am not sure on this one - definitely when I was little!

13. Who is your favorite Disney Couple? Belle and the Beast!

What's Up Wednesday 2.24.16

It's hard to believe it's time for another What's Up Wednesday post!  I am linking up with my usual Wednesday girls - Jessi and Jenn for What's Hap-pinning Wednesday and Shay for What's Up Wednesday.

What I'm eating this week...crockpot buffalo chicken.  I made this Monday and it is by far one of the easiest recipes I have ever made.  Not to mention it is delicious!  I really love eating it over rice, with some shredded cheddar cheese and avocado.  Yum!

What I'm reminiscing about...the last time I flew.  With my upcoming trip to Naples, I am preparing myself to fly.  Last time I flew was to Scottsdale for a girls trip.  It was so easy and painless, but I get so nervous about flying.  

What I'm loving...working out on a consistent basis.  I feel like I am constantly talking about working out and trying to stay consistent.  I feel like I have finally gotten into a good routine.  Even though I don't always want to go, I know how much better I will feel if I do.  It's that post working feeling that I am totally loving!

What I've been up to...I feel like things have been busy, but I can't necessarily pinpoint why.  I just always feel like I need more hours in the day to accomplish what I want to!

What I'm dreading...as beyond excited I am about this work trip, I am also equally nervous.  The mingling, small talk, flying alone all that is making me very anxious.  I am a pretty quiet person around those I first meet, so this conference is a bit intimidating.  Although it is something I am "dreading," I am so happy about it, too (see "What I'm excited about"). 

What I'm working on...same as last month - going through my clothes.  I made it through my lighter sweaters and hanging items, but I still need to do my heavy winter sweaters.  It's never ending!  I am making progress, though.

What I'm excited about...Florida!  I am going to be in Naples...if anyone has suggestions, please send them my way.  I think I will have a free afternoon to do my own thing.  I am excited about the work opportunity, as well as just seeing the beach!  It's been so long.

What I'm watching...Madame Secretary, Pretty Little Lairs, Elementary, Fixer Upper, Teen Mom OG...honestly the list could go on.  I have also been watching a bit of the debates/town halls the presidential candidates having been holding.  While I definitely have my favorites, it is interesting to hear everyone speak their piece.

What I'm listening to...Drunk On Your Love by Brett Eldredge.  You can bet there is a concert going on in my car when this song comes on the radio.   

What I'm wearing...depends on the day.  This weather has been insane 70's last Friday to expecting snow for today.  Constantly checking the weather to see what is appropriate to wear!

What I'm doing this weekend...Provident's gala!  I have mentioned a few times (here and here) about Provident.  I am on the Young Professionals Board and the annual gala is on Friday.  While I am volunteering as opposed to actually attending, I am still very excited.  A reason to wear a fun dress and help a good cause?!  Count me in!  Here's to hoping we are able to raise quite a bit of money for the agency!

What I'm looking forward to next month...my birthday!!!!!!!!     

What else is new...my mind is drawing a blank right now.

For the bonus questions...What is my favorite Easter tradition...lamb cake.  

I haven't been able to spend Easter with my family the past few years.  They celebrate on Sunday, which it just doesn't work out to go for the weekend and then have to drive back late on Sunday to make it back Monday for work.  However, my favorite tradition is my mom's lamb cake.  I just think the cake is beyond darling and makes it feel like Easter.

Easy Green Beans

I have mentioned before that vegetables - especially cooked vegetables are not my favorite.  This began to change when I started making these brussel sprouts.  As much as I love brussel sprouts, I figured I needed to change it up every so often.  Enter green beans.  This recipe is so easy and delicious - it makes you want to eat your vegetables!

Easy Green Beans
frozen whole green beans
olive oil
minced, dry onion
red pepper flakes

Bring water in a small pot to boil.  Add green beans and boil for 4 minutes.  Drain water and return to the stove on medium heat.  Add in a drizzle of olive oil, minced onion, and red pepper flakes.  Saute for about 5 minutes, stirring so that the green beans get coated in the olive oil and seasonings.  Enjoy!

This recipe is all about your preferences, hence the lack of measurements.  I can't handle too much spice, so I add in a very small amount of red pepper flakes for just a hint of heat.  I love the taste of the onion bits when they are cooked, so I shake in a good amount of those.  

It's an easy recipe that is simple enough to do, but adds a ton of flavor to an everyday side dish.  If you are looking for a main dish recipe to serve these with, check out the recipe for Chili-Braised Pork Chops (pictured above) here.

Weekend Recap

Sitting down to write this post, it feels like Friday was so long ago!  It has been an exciting weekend.

Friday started off a little crazy at work.  Just trying to finish up a project that kept needed tweaking.  Then it slowly started to turn around.  First, when I went to go grab some lunch, the sandwich station had my favorite pasta salad.  That alone just made the day better.  Then, it really did a 180 when my boss told me he would like me to go to a conference in Florida coming up!  This will be my first time traveling with my job, and I am SO excited.  Crazy nervous, but also super excited!  The weather was amazing on Friday - I think it made it to the 70's - which had me craving a beer.  The evening was spent at a local pub enjoying some drinks and good food.

Race came out this weekend, so we caught an early showtime on Saturday.  The movie was really good.  It covered Jesse Owens' road to the Olympics held in Berlin, as well as touched on the decision for the U.S. to participate in those Olympic games.  I thought it was really well done.  I ran a bunch of errands Saturday, which is always nice to have those done come Sunday.

I headed to the mall first thing on Sunday to pick up a few things for my trip.  I also wanted to get a head start on an Easter present for Jack.  I have to say, I have been really disappointed in Barnes and Noble lately.  I love that store.  I could spend hours looking through all the different books.  However, I wasn't having much luck with the kids books, so I thought I would at the least treat myself to Teresa Guidice's new book.  I was looking online to make sure the store had it, before I started looking and it said I could pick up in store...for $26.00.  When I went back to the regular online price, it was $10 less!  This happened right after Christmas, too, when I went to pick up The Pioneer Woman's cookbooks.  The online price was so much cheaper than the in-store price.  Needless to say, as much as I love Barnes and Noble, I am definitely going to think twice about shopping there, at least in-store.  Just seems ridiculous to have to pay so much more when I can order online and save myself some money.  That set the mood for the rest of my shopping trip, but I did manage to pick up a few things that I think will work for the trip.  The rest of the day was spent doing laundry and relaxing.  It wasn't quite as productive as I had hoped, but not too bad!

Friday Favorites 2.19.16

Happy Friday!  Although this week was short, it was a doozy at work.  I love a long weekend, but the short weeks get me all mixed up on the days and it seems to make work a bit more hectic.  Moving on to my favorites for this week...

Jack is 6 months old!  Jack is my nephew/godson.  And he is quite adorable.  My sister-in-law has been all about the pictures/videos this weekend - I LOVE it!  Thanks, Jen!  Below is one of my favorites.  How sweet does he look?  

Making it to the gym everyday this week!  I try to make Friday my only off day, but usually I have another day slip in there.  This week I was able to stick with it and go Monday-Thursday.  Hopefully I will be able to keep this up in the coming weeks!

After confessing yesterday about not having a gala dress yet, I finally got my butt in gear and ordered two options online.  Fingers crossed one works!

Not only did I get the dresses, I also purchased some makeup and those navy shoes I mentioned here.  With my Nordstrom card, I was able to get triple points AND I remembered to use Ebates when ordering.  Plus, with my makeup purchase, I got a Clinique free gift and a few beauty samples.  I feel like I definitely made the most of my purchases!  

I am behind the times with this one, but there is another Harry Potter book coming out!  It makes me want to reread all the previous ones as a refresher.  I, along with pretty much everyone else, loved the books.  Super excited about this!

I Confess...

I have another round of confessions to share today.  Here we go...

My sister-in-law sent a new Jack video last night.  I literally sat there and watched it at least 10 times in a row.  He was having his first green veggies last night and his reaction to them was priceless.  It even sounded like he said "yuck" at one point!  Poor baby, he seemed so excited when he saw the spoon coming his way and then it was instant bleh when it reached his mouth.

I have a gala to attend next Friday and I still have not bought a dress for the event.  Why, I have no idea.  Usually I don't procrastinate when it comes to shopping, but I have known about this for weeks!  Better get on that.

Swamp People is one of my favorite shows.  To be honest, I have a lot of favorite shows - I just watch a lot of TV!  However, this one is a bit out of the ordinary from my normal genre of shows.  I love it, though!

I have been having some road rage lately.  People just are not going the speed limit and I do not understand.  If the speed limit is 40, why go 30?!  You should be going 40.  Obviously, it is winter and if the road conditions are not ideal then everyone should drive slower.  But on a normal day, there is no need for that.  Just drive the speed limit, please! 

Yesterday at the gym I had to get on 3 different treadmills before I found one that worked properly...it was a bit embarrassing.  I love my gym, because it has a row of treadmills with the individual TVs in the machines.  This really helps the time pass for me while I am running.  The first one I got on, said the "stop" button needed to be replaced.  Onto the next one...the TV doesn't work.  I thought maybe it was just off, so I was on for a minute or so, pressing buttons to no avail.  Third time was a charm in this case, so thankfully I was able to get on with my workout.  However, I felt a bit silly going from one machine to another, just pressing buttons.  The people behind me were probably like what the heck is this girl doing?!

Weekend Recap

This past weekend was super nice.  Not only was it a long weekend, it was Valentine's Day weekend!  Here are a few highlights from the past few days.

Friday brought an early Valentine's Day celebration - a surprise stay in the city with dinner out.  Below is the view from our room.  Every time I go downtown, I want to move to the city! 

Brunch on Saturday at one of my favorite places - Rooster

Played major DVR catch up.  I had 4 episodes of Pretty Little Liars to watch.  I have to say - I am NOT a fan of Caleb and Spencer.  It just seems so odd!  Bring back Haleb!

For the "at home" Valentine's Day celebration, I made lamb.  I used the Armenian Lamb Shish Kebabs recipe from Kris Jenner's cookbook.  Delicious!  

Did absolutely nothing on Sunday.  While I should have been semi-productive it was nice to just relax, watch Hallmark movies and read.  I didn't feel as bad because I knew I would be able to get some things done on Monday.

Saw Deadpool on Monday.  I was really excited about this movie, mainly because of Ryan Reynolds.  It was good!!  A very sarcastic and hilarious take on a super hero movie.  Definitely a movie for adults though.  There was a family in the theater, and although the kids seemed like teenagers, I still felt like it wasn't necessarily appropriate.  

It was so nice to have that extra day off...now I am just counting the days until the next three day weekend...come on Memorial Day!  I am thinking I will be needing to get in some PTO before then.

Cheap Garbage Disposal Cleaner/Deodorizer   Slice lemons, put in ice cube trays and cover with vinegar. Freeze. Store in a ziplock bag. Pop one of these little cubes in the garbage disposal and grind away! Use these all the time! Love them!:

Friday Favorites 2.12.16

TGIF!  I am so happy that we have made it to the long weekend.  I have a random array of favorites today.

What did we do before googling?  This week google saved me.  I was going out of my mind at work, trying to figure out how to angle a chart label.  Insert google.  I knew it was an easy thing, but could not figure it out myself.  Within a few minutes, I knew how to do it.  Thanks, google!

My new hairspray arrived (TRESemme 24 Hour Body Finishing Spray)!  I found out about this spray via Karly's blog.  I couldn't find it in any stores, so when I was ordering a few things off Amazon, I quickly added it to my cart.  I have only used it one day, but I really like it!  I am constantly trying to find ways to add volume to my hair.  I feel like this spray did the job and had a really nice hold throughout the day.

Valentine's Day presents.  My parents have always gotten us small presents for Valentine's Day.  I am so happy that this has continued, even as we have gotten older.  My mom always puts together a cute little bag, adorable tags, and thoughtful presents.  This year's "theme" was heart healthy, so one of my presents was a new work out shirt.  I have really been trying to make working out a priority and fun work out clothes make it easier to keep on track.

Valentine's Day flowers.  I came home from the gym last night to these gorgeous flowers.  Having fresh flowers always spruce up a space, especially when they are a sweet, thoughtful gift!

President's Day!  My company started recognizing President's Day as a holiday last year.  I am still not used to it.  I kept forgetting we had a day off this month.  It was like a neat surprise over and over again, each time I remembered!  Hope those of you that are also off, enjoy the long weekend!

Chili-Braised Pork Chops

Last night I made chili-braised pork chops.  I have to be honest, I was kind of banking on it being good, because I was hoping to post about it today.  Thankfully, it was GREAT!  The house smelled wonderful, the meat was tender and the gravy was super yummy.  My mom passed along this recipe to me, so thanks mom!

Chili-Braised Pork Chops
1 1/2 lbs boneless pork chops
1 teaspoon of olive oil
1 3/4 cups of chicken broth
3 Tablespoons of flour
1/2 teaspoon of chili powder

Sprinkle salt and pepper on both sides of the pork.  In a large, straight-sided skillet, heat 1 teaspoon of oil over medium-high heat.  Add pork and brown on both sides, about 7 minutes total.  Whisk together the flour, chili powder and chicken broth and add to the skillet.  Bring liquid to boil, reduce to a rapid simmer, cover and cook 30 minutes.  Uncover and cook until pork is tender and the sauce is thickened, about 20 minutes.  Enjoy!

I served this with the Pioneer Woman's mashed potatoes and green beans - check back as I will be sharing that recipe soon!  These greens beans are so delicious and so easy!  Also, I spooned some extra sauce over my pork chop when it was time to eat.  I just love a good gravy.

Weekend Recap

Who is ready for another Monday?

This weekend was pretty low-key.  Not much to report, so I will keep this short and brief with just a few highlights.

Hail Caesar on Friday.  It was ok, not great, but definitely not bad.  I just feel like the stories could have been more developed...there was a lot going on in the movie.  I also feel like the trailer gives you a different impression of what the story line is actually going to be.

The People vs. O.J. Simpson.  I watched the first episode this weekend.  I remember my mom being glued to the TV when it was all unfolding, especially for the trial.  Can't wait to see the infamous car chase in the next episode!

Making it to the gym both Saturday and Sunday.  I think I am on a two weekend streak of doing this!  Really trying hard to stick with being healthier this year.

Getting rid of about 20 pairs of shoes!  I made some good progress in my closet with going through all my shoes.  It is amazing what I had been keeping...really feels great to be purging!

Super Bowl show.  I really enjoyed the half time show...Beyonce and Bruno Mars were probably the highlight for me.  I also really, really liked the end where everyone was on stage together.  Definitely a great message!

Friday Favorites 2.5.16

It's Friday!  This was an interesting week for me...the days seemed long, but the week seemed really short.  I kept thinking Wednesday was Tuesday and then before I knew it, it was almost Friday.  Definitely better than thinking the opposite, that is for sure!

My new purse is definitely a favorite this Friday.  I confessed here that I broke my no spend month to purchase a new purse.  It was on sale, so much so that I couldn't refuse.  I switched over this week and have been loving it!  My other purse had three section inside, but this bag is all open.  It makes me think I need another pouch to get a little better organization...that will probably have to wait a bit, but hey, a girl can dream.

Meal planning.  I got my meal planning done earlier than normal this week!  Lately, I have been enjoying grocery shopping on Fridays.  I have only done it a few times, but it is always nice to get that accomplished going into the weekend, rather than waiting til Sunday (what I normally have done).  Last Friday, I planned over my lunch, then had to make a quick run home to check off what I already had from my grocery list, then headed back out to the store.  This week, however, I was able to grab some time over lunch on Thursday to plan and check my list in the evening.  I have found that it is easier to write down everything I need, check to see what I have and cross off, rather than do it as I go.  Also, I often "just know" I have something so I don't even check for it, only to find out after the fact I don't and I should have bought some at the store.  Oops!

Although with meal planning ahead of time (even if it was just one day!), the idea of a recipe binder is for sure a favorite.  I read over on Sarah's blog about how she meal plans.  She mentioned a recipe binder, which I thought was a great idea.  Normally if I am using a recipe online, I am using my phone to check it while I am cooking, which is sometimes a hassle.  It seems like the screen always goes black, right before I need to see the next step.  I have a recipe box I use for family recipes and others I have collected over the years, but I never want to waste a recipe card unless I know for sure that recipe is a winner.  Even if it is a winner, half the time it never makes it to the card, because I forget or get lazy.  This seems like a much simpler way to keep everything organized and readily available.  I can't wait to get a binder started!    

Nice co-workers.  There is a guy I sit close to at work that has had a cough for what seems like all of 2016 so far.  I have overheard that he has taken medicine, the works, but still hasn't been able to cut it.  A lady that works further down on the floor, overheard him coughing and came over to offer him some cough drops after a particularly bad coughing fit.  I just thought that was very nice.  I have cough drops in my bag,and while I would definitely offer them to a co-worker I was friendly with, I never thought to see if he would want any.  It's really neat to witness people going out of there way to offering help to someone, even if it is as simple as seeing if they would like a cough drop.

I got a card in the mail this week that said I had moved up a level in my Nordstrom rewards!  That means more reward points, more triple point days and more money towards alterations.  Unfortunately, it also means that I spent a good chunk of money there, too.  I am just going to focus on the positive (more rewards!) for now, though.

Hope you all have a great weekend - it's supposed to be another nice one here weather-wise.  Not quite as great as last weekend, but the 50's are still amazing for February!

Is it just me, or are we in the middle of a baby boom?  I feel like people are announcing pregnancies left and right!  In fact, one of my co-workers just announced that baby number two is on the way.  It's all so very exciting!    

One of my best friends told me that she was expecting shortly after the new year.  I really wanted to get a small gift for her and her husband.  I have wanted to do this before for my other friends, but it's always been one of those things where I have the best of intentions, but fall short on execution.  I was determined not to let my plans fall to the way side this time, though.  I wasn't certain what to get them, so I reached out to my sister-in-law, and then my mom.  My mom has a knack for thinking of cute gifts...I always ask her when I need help!  I came up with three things, one for the baby, one for the mom-to-be, and the dad-to-be.  I thought the gift turned out well, so I wanted to share, in case you too, are experiencing this surge in pregnancies/babies.  

First, for the baby.  Since they didn't know the gender yet, I decided to just get some white onesies.  I thought those were a pretty safe present...useful, but not gender specific.  Then, for the mama, I decided to go with something I remembered my mom getting my sister-in-law, Burt's Bees Mama Bee Belly Butter.  I checked with my sister-in-law, to make sure that was indeed what she had gotten and that she did like it!  Finally, for the soon-to-be dad, I picked up Jimmy Fallon's book, Your Baby's First Word Will Be DADA.  My mom picked this up for one of my cousin's and reminded me of that when I asked her for suggestions.  I thought it was kind of funny, and who doesn't like Jimmy Fallon?!
