White Chicken Chili

When I was home over Christmas, my mom made white chicken chili.  It was so good and really hit the spot!  I realized I didn't have her recipe so I made sure to remedy that ASAP.  I made it myself New Year's Day and it again just really hit the spot.  I know there are lots of different recipes out there, but you really can't have too many chili recipes, so I highly suggest trying this one out.  

White Chicken Chili
1 Tablespoon Vegetable Oil
1 Onion, Chopped
3 Cloves of Garlic, Minced
1 Can (4 oz.) of Chopped Green Chile Peppers
1 Teaspoon Cumin
1/2 Teaspoon Oregano
1/4 Teaspoon Cayenne Pepper
3 Cans (14.5 oz. each) Chicken Broth
3 Cups Cooked Chicken, Chopped
3 Cans (15 oz. each) White Beans
1 Cup Monterey Jack Cheese, Shredded

Heat oil in large pot over medium-low heat.  Add in the onion and slowly cook and stir until tender.  Mix in garlic, green chiles, cumin, oregano and cayenne pepper.  Continue to cook and stir until tender, about 3 minutes.  Mix in chicken broth, chicken and beans.  Simmer for 15 minutes, stirring occasionally.  Remove from heat and slowly stir in cheese until melted.  Serve warm.  Enjoy!

A few things to note:
This makes quite a bit of chili.  I had multiple bowls during the week, and put about half in the freezer.  I would say that it makes about 8 servings, obviously more or less depending on your actual serving size.  For the chicken, I used a rotisserie chicken (and used the leftovers to eat with salads!).  Another great option would be to cook some chicken in your slow cooker, then shred / cut up for the soup.  You can see my slow cooker chicken recipe here.  I use mild green chiles and just a little less than the full amount of cayenne pepper.  I can't do anything too spicy, so I do both these things to negate any of the heat the recipe may have.  I garnish mine with a bit more cheese, and I also think that avocado would make a great garnish.

  4. Your mom's sounds almost exactly like my mom's! I started making my mom's this past year and it is so flipping good! It freezes well, too! I always make a double batch and then our whole family can eat at least twice from it. It is seriously one of my favorite meals EVER. And it's perfect for this time of year! I keep wanting to post my version, but I never remember to photograph it. I have it on my agenda for this year, but we'll see if I actually remember to follow through!
