I love my mom's meatloaf. When I head back to my parents, I almost always ask my mom to make her meatloaf. It is just so good! I don't normally make it for myself, even though it is one of my favorite meals. To switch things up though, I decided to make it for dinner this week. It's super easy, doesn't require a ton of ingredients, and one of my favorite things about this meatloaf, the leftovers taste amazing - cold or heated up!
1 1/2 lb ground beef
1/4 cup chopped onion
1/4 teaspoon black pepper
3/4 cup oatmeal
1/2 teaspoon salt
1 cup tomato juice
Preheat oven to 350 degrees. In a large bowl, combine all ingredients, mixing well with your hands. Place in a loaf pan, shaping the meatloaf into a loaf shape (somewhat rounded at the top). Bake for 1 hour and 15 minutes. Remove meatloaf from the oven and discard of the excess grease, using a baster. Let sit for 15 minutes before serving. Enjoy!
I love adding a little ketchup to my meatloaf when eating (as you can see in the picture above). My family also loves eating it as a cold sandwich the next day. No matter how you like it, it is delicious!
