Pork Fajitas

This recipe is super flavorful and super easy to make.  The marinade has a very fresh taste, which makes it the perfect meal for the summer time...or anytime, really!  You can serve it over rice, or in a tortilla.  I love it both ways!
 

 
Pork Fajitas 
2 Tablespoons Lime Juice
2 Cloves of Garlic, minced
2 Tablespoons Cumin
1/3 Cup Vegetable Oil
1 teaspoon Kosher Salt
1/4 teaspoon Black Pepper
2 Pork Tenderloins (about 2lbs)
1 large Red Onion, cut in chunks
2 Red Bell Pepper, cut in chunks
 
Combine marinade in ziplock bag.  Add pork chops to the bag, marinate in the refrigerator for at least 1 hour (I usually marinate overnight, or just the entire day).  Grill pork chops, about 7-8 minutes per side (time may vary depending on the thickness).  After you flip your pork chops, add your peppers and onions to the grill until done.  
 
I like to serve this topped with a little sharp cheddar cheese, salsa and sour cream.  Enjoy!
